This light gluten free cake is made with apple sauce - tastes good, keeps moist!

If no-one wants that last bit of apple sauce try this delightful, easy to make gluten free apple cake.You'll like it so much you'll save some apple sauce just to make this versatile gluten free cake recipe! You can bake it plain, add cinnamon or raisins or put a topping on it (or all of them) - it just gets better.
If you want to pretty it up, divide the batter between two 9" round or square cake pans. When the cakes are completely cool, gently spread cream cheese frosting (recipe below) and jam on one of the cakes. Place the second cake on top and cover the top and sides with more cream cheese frosting - if you haven't "tested" it all.
Gluten free apple cake recipe
Ingredients
- 1 cup butter
- 1 cup sugar (use brown sugar for a more caramel-y flavor)
- 4 eggs
- 2 1/2 cups plus 2 tablespoons brown rice flour
- 2 teaspoons gluten free baking powder
- 2 teaspoons guar gum
- 1 1/2 cup unsweetened apple sauce
Directions for making gluten free apple cake
- Separate the egg whites into a medium sized bowl and beat until fluffy. Hint: the bowl has to be perfectly clean. If there's any grease in it, the eggs won't fluff up.
- Place the egg yolks in a separate mixing bowl with the butter and sugar. Beat until combined.
- Stir the flour, baking powder and guar gum into the butter mixture.
- When the batter is well mixed stir in the apple sauce.
- Fold in the beaten egg whites. Do not overmix.
- Grease two 9 inch round baking pans or a 9x13 inch rectangle. (See hint below.) Pour in the gluten free apple cake batter and smooth with the back of a spoon dipped in water.
- Bake at 325 degrees for 40 - 45 minutes or until a toothpick inserted in the middle comes out clean.
- When cool, gently loosen the edges and turn out carefully onto a wire rack.
Notes for this gluten free cake recipe
Handy Hint for pain-free cake removal (works with square cake pans). Cut a piece of baker's parchment paper to fit inside your cake pan with enough extra paper sticking up on two sides so you can pull the cake out with minimal sticking. Run a knife along the two sides without the parchment paper to release the cake from the pan.If you didn't use parchment paper, run a knife around all four sides of the cake pan and then stick your widest spatula under the edge of the cake and gently pry it up from the bottom. You may have to work your way around the whole cake like this until you feel it release. | |
Mix two teaspoons cinnamon and a tablespoon of sugar. Sprinkle it on the top of the batter before baking. | |
Add 1 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground cloves with the flour for a spicy cake. | |
Add 1/2 cup raisins with the apple sauce. | |
Place a paper doily on top of the cake and sprinkle with icing sugar, leaving a pattern. Nice for a fancy tea party. | |

Cream cheese frosting
- 2 packages cream cheese (16oz) softened
- 1 cup butter
- 4 cups icing sugar (adjust to taste) Note: some icing sugars may have wheat as filler - if you're worried, use fine berry sugar.
- 4 teaspoons vanilla (or to taste)
Cream the butter and cream cheese together. Add the vanilla, then the sugar and beat until the frosting is completely smooth and soft. Any leftover frosting should be disposed of using a spoon and your mouth :)
