• 3 oz. sweet sorghum flour
• 1 oz. tapioca starch
• 1 teaspoon salt
• 1 ½ teaspoon baking powder
• 8 oz. water
• 2 eggs
• 2 oz. extra virgin olive oil
• ½ teaspoon vanilla
• 2 tablespoons cocoa powder

Breakfast cookie recipe

Ingredients

• 2 eggs
• 1/2 cup liquid honey
• 1/4 cup butter, melted and slightly cooled
• 1 cup carrots, grated
• 1 cup almonds, coarsely chopped
• 1/2 cup raisins
• 1/2 cup dried apricots, finely chopped
• 1/2 cup dates, chopped
• 1 cup brown rice flour
• 1 1/2 cups large-flake rolled oats
• 3/4 teaspoon cinnamon
• 3/4 teaspoon nutmeg
• 1/2 teaspoon baking soda
• 2 teaspoon guar gum

How to make breakfast cookies

1. In a large bowl, whisk eggs, honey and melted butter until smooth and well blended.


2. Stir in the carrots, almonds, raisins, apricots and dates.


3. In a separate bowl, combine the rice flour, oats, cinnamon, nutmeg, baking soda and guar gum.


4. Tip the flour mix into the fruit mix and stir until well blended.


5. Spoon walnut size pieces of dough onto a greased cookie sheet (or use parchment paper for easy clean up), about an inch apart, baking at 325 degrees for 15 to 20 minutes or until the cookie is firm when lightly pressed and golden.


6. Remove the breakfast cookies onto a wire rack to cool.


7. Store in an airtight container.
