One of my most popular gluten free cake recipes -- this gluten free banana bread will quickly become a favorite!
I don't know many people who don't like banana bread - it's one of my family's favorite gluten free cake recipes.
Plus, making this tasty gluten free banana bread gives me a chance to use up those bananas that seem to get over-ripe overnight.
Sometimes I add pineapple or chocolate chips. I have to admit I like my banana bread plain because then I can spread it with butter and not feel guilty!
My friends reluctantly tried this gluten free banana bread recipe and decided they liked it more than the wheat kind. It just goes to show that we gluten intolerant ones can have delicious food too.
Gluten free banana bread recipe
Ingredients
- 1/2 cup butter
- 1 cup sugar
- 2 eggs, beaten
- 2 mashed bananas
- 1 teaspoon vanilla
- 2 teaspoons guar or xanthan gum
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 2 cups brown or white rice flour
Directions for making gluten free banana bread
- Cream the butter and sugar until smooth.
- Add the eggs one at a time and continue beating.
- Add the mashed bananas and vanilla. Combine until well blended.
- Add the guar gum, baking powder and baking soda, then the rice flour. Keep mixing until the batter is smooth and creamy.
- Grease an 8x4 inch loaf pan and pour in the mixture.
- Carefully smooth the top of the batter with the back of a spoon dipped in water (keeps it from sticking to the spoon).
- Bake at 325 degrees for 45 to 50 minutes or until a toothpick inserted in the middle of the gluten free banana cake comes out clean.
- Let cool 10 to 15 minutes, then turn out onto a wire rack to finish cooling.

I usually double the recipe so I can pre-slice and freeze the second loaf.For company dessert, serve with a fruit sauce (like blueberry) or icecream (or both!)
It's really good spread with lots of butter too :)
If you don't have time to make gluten free banana bread right now, freeze the bananas in their skins. They'll come out looking black and ugly, but that's okay. Once they're cooked, they're fine and no-one knows what they looked like frozen. Don't let your kids see them!
If you want to include chocolate chips, include about 1 cup semi-sweet.
