this old-fashioned favorite gets a gluten free pasta recipe makeover
This homemade mac and cheese recipe is a new twist on an old favorite.
I think we all have our own variations, but just for fun I've included a few ideas in the Notes section at the bottom of the page.
You can make this gluten free pasta recipe for one or a hundred (I hope you don't have to!) because it's easy and everyone loves it - bubbling golden and hot from the oven.
Finding gluten free pasta is a lot easier now - which is great for those of us with gluten intolerance.
Homemade mac and cheese recipe
To Serve 2...2 cups dry gluten free pasta
1 1/2 cup milk or milk substitute
4 tablespoons (1/8 cup) brown rice flour
2 - 3 cups grated cheese

Ingredients
To Serve 4...- 4 cup dry gluten free pasta such as corn or brown rice
- 2 1/2 cups milk or milk substitute
- 1/4 cup brown rice flour
- 4 - 6 cups grated cheese, such as old cheddar
Making your mac and cheese recipe
- Cook the pasta in a large pot according to the manufacturer's directions, then drain.
- In a meduim-sized pot, gently heat some of the milk over a low heat.
- To serve 2, heat 1 cup
- To serve 4, heat 2 cups
- In a small bowl, whisk the other 1/2 cup of milk with the rice flour.
- When the milk in the pot is almost boiling, stir in the rice flour and milk mixture.
- Stir continually until the sauce thickens and comes to a boil.
- Remove from heat. This is your white sauce.
- Add the grated cheese to the white sauce, stirring until it melts in.
- To serve 2, add 1 to 2 cups of cheese
- To serve 4, add 3 to 4 cups of cheese
- Pour the cheese sauce into the pot of drained pasta.
- Mix it all up until all the macaroni is well coated.
- Tip the mac and cheese mixture into an oven-proof dish.
- Sprinkle the remaining cheese over top.
- Bake, covered, in a 350 degree oven for 20 minutes. Remove the cover and broil until the cheese is bubbly and golden.

If you want a creamier homemade mac and cheese recipe, add a little more milk. | |
Instead of making a white sauce, use a can of mushroom soup. Make sure it doesn't have wheat or wheat products in it though. | |
To skip the entire sauce-making process, leave some of the cooking liquid in the pot - don't drain it all the way. Then just stir the cheese into the hot pasta until it's melted in. (It helps if you grate the cheese smaller.)Another choice is to completely drain the pasta, pour in some milk and then mix in the cheese. | |
Try adding 1 teaspoon hot mustard powder to the brown rice flour. It gives the sauce a tasty bite. | |
Add a can of corn niblets to the cheese sauce for a change. | |
Mix in chopped hotdog or pre-cooked and diced bacon for a rich flavor. Or my daughter sometimes stirs in a can of drained tuna. |
