These easy to make gluten free cookies are sweet with chocolatey goodness, plus they crunch deliciously with every bite
I don't know anyone who doesn't like cookies!
Some of my friends have been converted to this gluten free chocolate chip cookie recipe because they like the flavor better.Plus the oatmeal makes them oh-so-slightly nutritious!
Sometimes (because of the lack of gluten) the texture of gluten free cookies can be crumbly, but these gluten free chocolate chip cookies are every bit as good as you'd expect to find in the wheat based ones.
For a change, try butterscotch chips or M&M style chips, especially for a special occasion such as a kids party.
Gluten free chocolate chip cookies
Ingredients
- 1 cup butter
- 2/3 cup white sugar
- 2/3 cup brown sugar
- 2 large eggs
- 1/2 teaspoon vanilla
- 1 teaspoon baking soda
- 1 1/2 cups brown rice flour
- 2 cups quick oats (small oat flakes or unflavored oatmeal)
- 1 1/2 cups semi-sweet chocolate chips
Directions for making gluten free chocolate chip cookies
- Cream the butter and sugar until smooth.
- Add the vanilla and the eggs and continue beating.
- Add the baking soda and mix well.
- Gradually add the brown rice flour and oatmeal until the batter is creamy. Add the chocolate chips until they're all evenly coated and distributed through the batter.
- Drop by teaspoonful onto a greased cookie sheet. Bake at 325 degrees for 12 to 15 minutes.
- Remove from oven. After 1 minute, move the cookies onto a wire rack and allow to finish cooling.
Notes for making these gluten free chocolate chip cookies
My personal taste is for a slightly less sweet cookie, so I reduce the sugar a bit.White rice flour gives a crispier cookie.
Eat the uglier ones yourself first!
